2 Quick and Easy Breakfasts to Power Your Day

You’ve heard it from your mom, your middle school health teacher, and every morning talk show host. Breakfast is the most important meal of the day. But, it can be hard to find the time to make a healthy, wholesome breakfast before you head out the door and start your day. These two easy recipes can be made in the morning or prepped the night before, and will be sure to give your body the proper nutrients it needs to kick start your metabolism and power you throughout the day. Oatmeal

A morning classic. Oatmeal is a great source of complex carbohydrates, which digest slower in the body as compared to simple carbohydrates. Complex carbs give your body a steady supply of energy, keeping you focused and energized all day. While oatmeal is great on its own, there are so many ways to jazz it up and pack it with even more nutrients. If you’re short on time in the morning, make your oats the night before in a Tupperware container (or my personal favorite—a near empty jar of peanut butter) and store in the fridge overnight. Come morning, you have a delicious and nutritious breakfast ready to grab on your way out the door! You can make overnight oats in so many flavors, and change the add-ins based on your own tastes.

Overnight Oats:

Prep time: 5 minutes or less

1/3C old-fashioned oats

1/3C Greek yogurt

1/3 to ½C milk of choice (depending on how thick you like it)

Cinnamon to taste

Suggested Add-ins:

½ banana

Handful of chocolate chips

1T peanut butter (if not using a jar)

1T chia seeds

1/4C frozen berries

Stir all ingredients together. Store in the fridge overnight. Grab a spoon in the morning and enjoy!

Or, if you have an extra 5 minutes in the morning, try making these protein-packed oats. The egg whites not only add extra protein, but make the oats extra fluffy!

Microwavable Protein-Oats:

1/3C old-fashioned oats

2/3C water

2 egg whites

Cinnamon to taste

Microwave 1/3C oats with 2/3C water for 1.5 minutes. Remove and stir in 2 egg whites and cinnamon. Microwave for 30 seconds. Remove, and stir oats once more. Microwave for 30 more seconds. Add desired toppings and enjoy!

The Two-Ingredient Pancake

Yes, two ingredients. This is by far the easiest breakfast recipe on the planet. All you need is a banana, two eggs, and cinnamon (okay, technically three ingredients). This simple breakfast is loaded with protein and carbs to keep you full throughout the morning. And for extra brainpower, add in some nuts to the batter or top your stacks with peanut butter for added healthy fat. Pro-tip: you can make these ahead of time and store them in the fridge.

2-Ingredient Pancake:

Prep Time: 2 Minutes

Cook Time: 5 Minutes

1 banana

2 eggs

Cinnamon to taste

Mash the banana in a bowl. Stir in 2 eggs and cinnamon. Cook in a non-stick skillet on medium heat, flipping pancakes half way through.

Suggested toppings/add-ins:

Peanut butter

Chocolate chips

Coconut flakes
